Our philosophy is simple: a delicious and refined Ville et Village cuisine that combines sophistication with authenticity. We have partnered with local farmers to grow produce based on our recipes, ensuring a secure market for their crops while also providing our kitchens with the necessary vegetables, fruits, and herbs to create delicious dishes. This is what we call Menu Farming.
The menu is designed by Chef Peter Jabbour. The chef and his team have scoured the region in search of the best artisanal produce such as jams, honey, cheeses, and dairy products. They have also selected exceptional vegetable and meat producers, as well as located wild herb and mushroom pickers.
You will wake up to the fresh morning mountain air and the aroma of Illy Coffee. The duality of a sweet and savoury breakfast will appeal to all tastes. Our home made jams, cedar honey, an array of local chèvre cheese and charcuterie with baked goods will grace your table, or a hot breakfast of eggs—your style and our signature zaatar pancakes will prepare you for the day ahead.
Our lunch buffet is inspired by regional dishes-eat as the locals do-as well as traditional Lebanese dishes, but all with a new twist. The menu obtains many of its ingredients from the farms we collaborate with, to ensure that the flavours of the regions come through.
Our à la carte menu is for guests who would like to enjoy their evening meal from a selection of delicious dishes that strike a fine balance between modernity and tradition.
Our Bar Michel is a whiskey bar that was created in collaboration with The Malt Gallery, and stocked with the finest whiskeys and spirits. The bar also features a Bar Snacks menu to accompany your special drink, and our signature cocktails.
